Cheesy Potato & Stuffing Casserole

  1. Melt 1/4 cup of butter.
  2. Mix together with soup, sour cream, onion powder, & salt.
  3. Set aside.
  4. Cut potatoes into 1/2 inch cubes.
  5. Can peel potatoes first if you like.
  6. I like to leave the peel on.
  7. Combine potatoes & cheddar in slow cooker & mix well.
  8. Add soup mixture & mix well.
  9. Sprinkle stuffing over top.
  10. Melt remaining butter.
  11. Drizzle over the stuffing mix.
  12. Cover slow cooker.
  13. Cook on high for 5 hrs or low for 8 hrs or until hot & bubbly & potatoes are tender.
