Armagnac Poached Prunes With Vanilla Ice Cream Recipe
- 1 1/2 c. Armagnac or possibly brandy
- 1 c. sugar
- 1/2 c. water
- 1 x cinnamon stick broken in half
- 1 piece fresh ginger - (1" long) thinly sliced
- 1 x vanilla bean split lengthwise
- 1 lb pitted prunes halved (abt 3 c.) Vanilla ice cream
- Combine Armagnac, sugar, 1/2 c. water, cinnamon and ginger in medium saucepan.
- Scrape in seeds from vanilla bean; add in bean.
- Stir mix over medium heat till sugar dissolves.
- Add in prunes and simmer till tender, about 10 min.
- Transfer prune mix to medium bowl.
- Cover and chill at least 3 hrs.
- (Can be prepared 4 days ahead.
- Cover and keep refrigerated.)
- Remove cinnamon, ginger and vanilla bean from prune mix.
- Divide prune mix among 6 bowls.
- Top with scoops of vanilla ice cream.
- This recipe yields 6 servings.
