Bananas Foster Custard Recipe
- 1 1/2 c. Bananas,hard-ripe,sliced
- 6 x Large eggs
- 1/2 c. Sugar,granulated
- 2 Tbsp. Butter or possibly margarine
- 1/4 tsp Cinnamon,grnd
- 2 Tbsp. Lemon juice
- 1 1/2 c. Lowfat milk
- 2 tsp Rum extract
- 1/2 c. Brown sugar,firmly packed
- 1.
- Toss banana slices with lemon juice; drain off excess.

- Set aside 6 banana slices for garnish; divide remaining slices proportionately among six lightly buttered 6-oz custard c..

- Set c. in shallow baking pan.

- Beat Large eggs, lowfat milk, granulated sugar and rum extract till well blended; pour proportionately into custard c..

- Place pan in preheated 350'F.
- oven; pour VERY warm water into pan to within 1/2 inch of top of c..
- 6.
- Bake about 40 to 50 min, till knife inserted near center comes out clean.
- 7.
- Remove c. immediately from warm water; cold on wire rack 5 - 10 min.
- 8.
- To serve, gently loosen custards with thin spatula; invert onto serving plates and garnish with reserved banana slices.
- 9.
- Heat butter in small saucepan over low heat; blend in brown sugar, water and cinnamon.
- 10.
- Bring to a boil; boil 3 min.
- 11.
- Spoon about 1 Tbsp.
- warm syrup over each custard and serve immediately.
