Gf Baked Blackberry Chicken
- 1 12 lbs chicken thighs
- 1 cup blackberry jam
- 2 teaspoons ginger
- 2 garlic cloves, minced
- 2 tablespoons rice vinegar
- 2 tablespoons gluten-free soy sauce
- Mix everything except the chicken until lumps are gone and it forms a smooth sauce.
- Marinate chicken in blackberry sauce overnight.
- Discard marinade.
- Bake in a 350 oven for 40 minutes.
- Grill under the broiler to crisp the skin for about 3-4 minutes.
