Verito's Basil Pesto
- 4 cups basil
- 12 cup olive oil
- 13 cup pine nuts, toasted
- 2 garlic cloves
- 12 cup parmesan cheese, finely grated
- 1 teaspoon kosher salt
- Combnine basil, garlic, salt, pine nuts in a blender/processor.
- chop finely.
- With motor still going, add oil in a thin stream.
- Scrape down sides to make sure all solids are well mixed.
- Continue to blend until smooth.
- Add cheese and give the machine one short burst to blend ingredients well.
