Bing Cherry Jam Recipe
- 4 c. Pitted, minced bing cherries
- 1 pkt Powdered pectin
- 1/4 c. Lemon juice
- 1/4 c. Almond liqueur
- 1/4 tsp Salt
- 1/2 tsp Grnd cinnamon
- 1/2 tsp Grnd cloves
- 4 1/2 c. Sugar
- (From Ball Blue Book)
- Place all ingredients, except the sugar, into a 4-6 qt (3800-5200 ml)
- kettle, bring the mix to a boil which can't be stirred down.
- Immediately add in the sugar.
- Bring the mix to a boil and continue boiling for 2 min.
- Skim mix.
- Pour warm jam immediately into warm jars, leaving 1/4 inch ( 6 mm) head space.
- Adjust caps.
- Process 10 min in a boiling water bath canner.
- Yield 5 or6 half-pint jars (1200-1400 ml).
