Potatoes, peas, and blackeye peas
- 1/4 cup thinly sliced onion
- 1 1/4 cup shredded potatoes or hashbrowns
- 1 tsp ground turmeric
- 1/2 tsp cayenne pepper
- 1 tsp whole cumin seeds
- 1/2 tsp salt
- 1 tsp granulated garlic powder
- 1/4 cup olive oil, extra virgin
- 15 oz can of blackeye peas unsalted
- 1/2 cup sweet peas frozen
- Heat oil in a wok or similar pan
- Add potatoes fry till crunchy set aside on paper towels
- Add onions
- Drain can of blackeyed peas.
- Add blackeyed peas, spices, and seeds
- Stir fry till liquids are reduced about 4 minutes add green peas
- Add potatoes incorporate well stir frying till potatoes are coated with spices serve hot hope you enjoy
