Coquilles St. Jacque

  1. In medium saucepan combine ingredients for court bouillon, bring to a boil.
  2. Simmer 10 minutes add 1/2 cup wine.
  3. Add scallops, simmer 6 minutes, drain, reserve liquid.
  4. Prepare sauce.
  5. Saute onions and mushrooms in 1/2 cup butter until tender.
  6. Remove from heat, stir in flour and pepper blend well.
  7. Gradually stir in cream, bring just to boil stirring constantly.
  8. Reduce heat and simmer until thick 4 to 5 minutes.
  9. Add gruyere cheese stir until melted.
  10. Remove from heat stir in wine and 1/2 cup court bouillon and parsley.
  11. Add scallopps mix well.
  12. Divide into 6 scallop shells.
  13. Prepare mashed potatoes with egg yolk.
  14. Pipe around scallop shells with pastry bag and star tip.
  15. Sprinkle with parmesan cheese.
  16. Place shells on cookis sheet.
  17. Broil 4 inches from heat until golden brown and heated through, 2 to 3 minutes.
