Gingerly's Giblet Gravy
- 1 lb turkey giblets
- 1 onion, peeled and halved
- 2 garlic cloves, peeled
- 1 carrot
- 1 celery
- 3 sprigs fresh sage
- 1 sprig fresh tarragon
- 5 cups water
- 1 cup dry white wine
- 1 tablespoon poultry seasoning
- 14 teaspoon cracked black pepper
- 1 cup hot water
- 3 tablespoons cornstarch
- Put everything except the one cup hot water and cornstarch in a large dutch oven.
- Simmer for 3-4 hours.
- Run liquid through a strainer and return to pan.
- Discard solids.
- Dissolve cornstarch in water and add to liquid.
- Whisk constantly for three minutes or until thickened.
