Arrabbiata With Gina Recipe
- 6 med red bell peppers
- 18 x plum tomatoes
- 12 med garlic clove
- 4 Tbsp. extra-virgin extra virgin olive oil Coarse salt to taste Freshly-grnd black pepper to taste
- Heat oven to 425 degrees.
- Place peppers, tomatoes, and garlic on a large baking sheet.
- Drizzle with 2 Tbsp.
- extra virgin olive oil; sprinkle with salt and pepper.
- Roast till soft, wilted, and charred, about 30 min.
- Transfer peppers to a shallow bowl.
- Set aside to cold.
- Peel, and seed.
- In the bowl of a food processor fitted with a steel blade, combine roasted peppers, tomatoes, garlic, and remaining 2 Tbsp.
- extra virgin olive oil.
- Process till chunky.
- Season to taste.
- This recipe yields 4 servings.
