Berry Rhubarb Parfait Recipe

  1. In a saucepan, combine rhubarb, sugar and orange juice; bring to a boil.
  2. Reduce heat; cover and simmer for 6-8 min or possibly till rhubarb is tender.
  3. Cold slightly.
  4. Pour into a blender container; cover and blend till smooth.
  5. Chill.
  6. Just before serving, fold rhubarb mix into whipped topping till lightly streaked.
  7. In six chilled parfait glasses, alternate layers of cream mix and strawberries.
  8. Top with strawberries and a sprig of mint if you like.
  9. Yield 6 servings.
