Rice cooker Cod
- 3 medium pieces of cod, or fish of your choice
- 1 tbsp olive oil
- 1 cup jasmine rice
- 1 vegtables of your choice
- 1 cup chicken broth, or water.
- 1 salt & pepper to taste
- Wash rice until water is clear.
- Add to rice cooker, and follow rice cookers directions to cook rice.
- You may add vegetables, but be sure to accommodate with a bit more liquid.
- While rice is cooking prep fish by seasoning and placing on foil covered steam rack that comes with rice cooker.
- If your rice cooker doesn't have one, just use foil, and fold sides to prevent oil from leaking out onto rice while streaming.
- Place fish on rack during the last two to three minutes of rice cook time.
- Cover, and cook.
- If you don't have a rack fold sides of foil and place directly on top of rice.
- How many minutes will be determined by the size of your filet.
- When timer goes off carefully remove fish from on top of rice, scoop out desired amount of rice, and lay your filet over rice.
- Serve with your choice of vegetables, and additional seasoning.
