Spinach Balls

  1. Cook onions in little oil over moderate heat until transparent.
  2. Add rice, stir over heat for 10 seconds.
  3. Add 1 cup of stock and stir.
  4. Add tomato paste, garlic and stir through.
  5. Simmer until liquid is almost absorbed.
  6. Add next cup of stock and repeat process.
  7. When final cup of stock is almost absorbed add spinach and stir through.
  8. Simmer covered until liquid is absorbed and rice is cooked (a little extra water may be required depending upon rice texture).
  9. Finally add cheese and mix through.
  10. Refrigerate until cold.
  11. Roll into balls and coat with bread crumbs.
  12. At this stage they may be frozen.
  13. Freeze well for up to 1 month.
  14. To serve, bake in oven, or lightly pan fry until heated through and golden brown.
  15. Serve with homemade or store bought tzatziki (yoghurt dip).
