Grilled Turkey and Ham Sandwiches
- 1 tablespoon mayonnaise, light
- 1 teaspoon dijon mustard
- 8 slices bread, white or whole wheat, whole grains, 1-ounce
- 4 slices deli turkey ower-salt breast, 1-ounce
- 4 slices deli ham ower-salt, 1/2 ounce
- 4 slices cheddar cheese, reduced-fat 1/2 ounce
- 8 slices tomatoes 1/4-inch-thick
- 1 x nonstick cooking spray
- 1 teaspoon olive oil
- 2 teaspoons garlic bottled minced
- 14.5 ounces tomatoes undrained diced
- 14 ounces chicken broth, low salt fat-free
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon black pepper
- 1 x parsley leaves chopped, for garnish, if desired
- Combine mayonnaise and mustard in a small bowl.
- Spread about 1 teaspoon mayonnaise mixture over 1 side of each of 4 bread slices.
- Top each slice with 1 turkey slice, 1 ham slice, 1 cheese slice, and 2 tomato slices.
- Top with remaining bread slices.
- Heat a large nonstick skillet over medium heat.
- Coat pan with cooking spray.
- Add sandwiches to pan; cook 4 minutes or until lightly browned.
- Turn sandwiches over; cook 2 minutes or until cheese melts.
- Carrot sticks and tomato soup:
- Heat olive oil in a medium saucepan over medium-high heat.
- Add minced garlic to pan, and saute 1 minute.
- Add tomatoes; chicken broth; balsamic vinegar; and black pepper.
- Reduce heat, and simmer 10 minutes, stirring occasionally.
- Garnish with chopped parsley, if desired.
