Chocolate Iced Coconut Cookies

  1. Preheat oven to 350 degrees (175 C.) F.
  2. Grease cookie sheets.
  3. Sift flour, baking powder, salt and cocoa into a large mixing bowl.
  4. Cut the butter into small pieces and add to mixture, mixing well.
  5. Add eggs and mix until well blended.
  6. Wet hands with cold water and roll tbspful-sized dough into balls.
  7. Place on cookie sheets 3 inches apart.
  8. Bake 13 to 15 minutes.
  9. Transfer to wire racks to cool.
  10. In a large bowl, cream the butter.
  11. Add in cocoa and boiling water, stirring until smooth.
  12. Add powdered sugar and beat until frosting reaches a spreadable consistency.
  13. If frosting seems too thick, add water.
  14. If it seems too thin, add powdered sugar.
  15. Spread on cooled cookies.
  16. Top cookies with a sprinkling of coconut.
