Pudding Ice Cream #3 - Lemon Berry

• 2 cups light cream, cold (or half and half)
• 1 (3 1/2 ounce) package instant lemon pudding
• 12 cup fresh strawberries, rinsed & dried, diced
• 8 ounces non-dairy whipped topping, thawed

1. Pour cold cream into a cold bowl.
2. Add pudding mix.
3. Using an electric mixer at low speed, beat until well blended.
4. about 2 minutes.
5. Let stand for 5 minutes.
6. Fold in the berries and whipped topping.
7. Pour into a 2-qt.
8. covered container.
9. Freeze 6 hours.
