Egg-Free! Fluffy! Tofu Pancakes!
- 100 grams Tofu (Silken, but if unavailable, firm tofu is fine)
- 180 ml Milk
- 1 few drops Vanilla essence
- 150 grams Cake flour
- 1 tsp Baking powder
- 40 grams Sugar
- Mix all of the ingredients together with a whisk in circular motions.
- Next, mix all of the ingredients together.
- Keep mixing well until the batter is smooth.
- Now mix all the dry ingredients from Step 1, into what you made in Step 2 and mix until only slightly lumpy.
- Heat up some vegetable oil in a frying pan.
- Next place the heated frying pan on top of a damp cloth for three seconds and then return the frying pan to the burner.
- Pour the dough into the frying pan in a circular motion, cover with a lid, and then cook on low heat.
- Once bubbles form on the surface, flip it over.
- Once puffy and fluffed up, they are done.
- Cook the rest of the dough!
- Top with butter and maple syrup if you have it!
- This doesn't use any eggs but it's still really fluffy.
