Tomatillo Salsa
- 1 lb tomatillos (8 or 9), husk removed, rinsed and dried
- 1 onion (8 ounces), cut into eighths
- 1 tbsp olive oil
- 6 clove garlic, peeled and each clove cut in half lengthwise
- 1 bunch cilantro, cleaned (2 ounces of tops), chopped
- 3 jalapenos, stems removed and each cut in half lengthwise
- 1 tbsp lime reduction (zest of 1 lime and 1/4 cup lime juice reduced to 1 tablespoon liquid)
- 1 salt to taste
- 1 pepper to taste
- Place a heavy bottomed saute' pan over high heat.
- In a bowl, toss the tomatillos and onion together.
- Season with salt and pepper and add oil to pan.
- When pan is really hot, sear mixture, turning and blackening for 5 minutes.
- Add garlic and jalapenos and cook 3 minutes.
- Remove from pan to a food processor or blender and let cool.
- Add cilantro and lime and pulse until chunky and the size of peas.
- *This recipe makes about 2 1/2 cups.
