Low-Carb Pancakes
- 14 cup bob's redmill low-carbohydrate baking mix
- 4 drops sweet leaf stevia
- 12 tablespoon baking powder
- 14 tablespoon vegetable oil
- 14 teaspoon salt
- 14 cup soymilk or 14 cup coconut milk
- 1 teaspoon vanilla extract
- In a bowl, lightly mix all the dry ingredients first.
- As soon as you add the liquids the batter will rise.
- If you plan to make multiple pancakes, use a big bowl.
- Do not over mix the ingredients.
- Lightly fold everything a few times.
- Cook on a greased skillet or griddle over medium to medium high heat until golden.
- I normally cover the pan and that helps it cook faster.
- Serve immediately.
