Low-Carb Pancakes

  1. In a bowl, lightly mix all the dry ingredients first.
  2. As soon as you add the liquids the batter will rise.
  3. If you plan to make multiple pancakes, use a big bowl.
  4. Do not over mix the ingredients.
  5. Lightly fold everything a few times.
  6. Cook on a greased skillet or griddle over medium to medium high heat until golden.
  7. I normally cover the pan and that helps it cook faster.
  8. Serve immediately.
