Reduced Sugar Pumpkin Bread
- 1 cup gluten-free flour
- 1 teaspoon xanthan gum
- 1 teaspoon baking powder
- 14 teaspoon baking soda
- 12 teaspoon salt
- 1 teaspoon cinnamon
- 14 teaspoon nutmeg
- 12 cup pumpkin
- 2 teaspoons liquid stevia
- 14 cup milk
- 1 egg
- 18 cup olive oil
- 12 cup nuts, chopped
- Mix together flour, powder, soda, salt and spices.
- Combine pumpkin, sugar, milk and eggs.
- Add dry ingredients and butter; mix until well blended.
- Stir in nuts.
- Pour into well greased loaf (9x5x3").
- Bake at 350 degrees for 45-55 minute.
