chorizo and eggs
- 6 1/2 oz chorizo (Mexican sausage)
- 1/2 onion
- 1 small hot pepper (jalapeno)
- 2 eggs
- 1 dash hot sauce (your choice)
- 1/2 fresh cactus (optional)
- get a frying pan.
- remove chorizo from casing, chop and fry.
- add all other ingredients including eggs.
- continue to mix with spatula so the eggs don't fry.
- scramble until all are firm.
- use flour or corn tortilla.
- garnish with cilantro.
