Asian chicken salad
- 1 head romaine lettuce
- 1 packages baby spinach
- 4 large boneless chicken breasts (grilled, and diced)
- 1 can mandarin oranges (drained)
- 4 oz shredded parmesan cheese
- 1/2 cup lo mein noodles
- 1/2 cup chopped walnuts
- 1 raspberry vinegarette dressing
- 1 quart fresh strawberries (washed and crowned)
- Grill chicken without any seasonings or spices for 10 minutes on each side, using an electric grill
- Chop romaine lettuce and place on the bottom of the bowl
- Layer baby spinach on top of lettuce
- Add chicken on spinach
- Add mandarin oranges, strawberries, and walnuts
- Toss ingredients until well mixed
- Serve in bowls
- Top with noodles and cheese
- Drizzle dressing over salad
- Walnuts may be substituted with pecans, or cashews
