Bow Ties With Eggplant Sauce Recipe
- 12 ounce pasta, bow tie
- 1/4 c. onion, minced
- 2 med garlic cloves, chopped
- 1/4 c. vegetable stock
- 1/4 tsp cayenne pepper
- 3 c. eggplant, minced
- 3 c. tomatoes, canned
- 1/2 tsp basil
- 1/2 tsp oregano
- Cook pasta al dente.
- Heat garlic, onion, and pepper in broth.
- Simmer 5 min.
- Add in eggplant and simmer till soft.
- Add in tomatoes, and spices.
- Simmer 20 min.
- Toss with pasta.
