Sausage and Cabbage Boil
- 6 whole Large Red Or White Potatoes
- 6 whole Carrots, Peeled
- 1 head Green Cabbage
- 1 quart Low Sodium Chicken Stock
- Water, If Needed To Fully Cover The Vegetables
- 1 whole Kielbasa Sausage (1 Pound Weight)
- 1 Tablespoon Dried Marjoram
- 1 teaspoon Dried Thyme
- Cut up (into bite-sized pieces) some firm potatoes like Red Bliss or white potatoes.
- Either work well in this dish.
- Place them in a large pot, then cut the carrots into coins or chunks and add them into the pot.
- Then core and chop a head of cabbage.
- I would suggest cutting it into quarters, then cutting those quarters into thirds and place them in the pot.
- Add some chicken broth or stock; low sodium is best.
- Make sure to add enough to cover most of the vegetables.
- Add some water if needed or more chicken broth.
- Finally add some Kielbasa sausage that youve cut into chunks.
- Season with some marjoram and thyme, cover the pot and let it simmer until the potatoes are done and the cabbage is done as well.
- It will probably take at least 15 minutes for the potatoes to be done.
- Taste and season with some salt and pepper if you like.
- Serve with some cornbread if you like.
- This was so good, I cant even begin to tell you.
- A by adding more potatoes, carrots and cabbage you can stretch this dish out as well.
- I really like budget friendly dishes like this.
