Vickys Kids Pasta Bolognese with Tomato-free 'Tomato' Sauce, Gluten, Dairy, Egg & Soy-Free
- 1 tbsp oil
- 1 finely chopped onion
- 2 tsp garlic puree
- 2 finely diced carrots
- 200 grams finely chopped mushroom
- 1/4 small tin of sweetcorn
- 200 ml chicken or vegetable stock
- 800 grams ragu, dolmio or my recipe (vic20adamant) for tomato-free tomato pasta sauce
- 1 pinch salt
- 1 handful of pasta shells
- 500 grams mince of your choice, pork, turkey, beef, quorn
- Fry onion and garlic in the oil until onion is translucent, then add your mince and cook until browned
- Drain off the fat, add the stock and carrots and cook for 5 minutes
- Add the pasta sauce and mushrooms and simmer gently for 20 minutes
- While that is simmering cook the pasta going by the instructions on the packet
- When the pasta is cooked, drain and add to the pan with the sweetcorn and season
- Sometimes I make a cheese sauce to mix through and bulk it out a bit if I'm a portion short but you should get 6 child portions from this and it freezes well
