Easy Dijon Scalloped Potatoes

  1. Preheat oven to 375F.
  2. Cook and stir onion in margarine in medium saucepan on medium heat until tender.
  3. Add flour; cook and stir 2 min.
  4. Gradually add milk, stirring until well blended; cook until mixture thickens and begins to boil, stirring frequently.
  5. Remove from heat.
  6. Stir in mustard.
  7. Layer potatoes and mustard sauce alternately in greased 2-qt.
  8. baking dish; cover.
  9. Bake 1 hour.
  10. Uncover; sprinkle with cheese.
  11. Bake an additional 10 to 15 min.
  12. or until cheese is melted and potatoes are tender.
  13. Let stand 5 min.
  14. before serving.
