Manicotti Oriental-Style

  2. Cook pasta according to package directions, but do not add salt.
  3. Drain in a colander.
  4. Spray a 13x9" baking pan with vegetable cooking spray.

  7. Spray a medium nonstick skillet with vegetable cooking spray.
  8. Heat skillet over medium heat.
  9. Add chicken.
  10. Saute until chicken is cooked through, about 4 minutes.
  11. In a large bowl, combine chicken, bread crumbs, green onions, and egg white.
  12. Spoon chicken mixture into shells.

  15. To prepare sauce, in a small bowl, combine wine and corn starch.
  16. In a medium skillet, combine broth, mushrooms, and soy sauce.
  17. Stir in wine mixture.
  18. Simmer over medium heat for 3 minutes.
  19. Spoon sauce evenly over shells.
  20. Sprinkle mozzarella over top.
  21. Bake until heated through and cheese melts, about 30 minutes.
