Honeyed Goat Cheese with Sour Cherries and Prosciutto
- 1/2 pound fresh goat cheese, at room temperature
- 1/4 cup cream cheese, at room temperature
- 1/2 cup milk
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons honey
- 4 slices toasted country bread
- 1/2 cup drained jarred sour cherries, chopped
- 4 ounces thinly sliced prosciutto (8 slices)
- In a medium bowl, combine the goat cheese, cream cheese and milk.
- Using a hand-held electric mixer, beat the cheese until smooth and creamy.
- Gradually beat in the olive oil.
- Scrape the cheese into a ramekin or small bowl.
- Drizzle the honey on top.
- Serve with the toasted bread, the cherries and prosciutto.
