Black Sesame Anpan Flavoured with Brown Sugar (Bread Rolls Filled with Beans Paste)

  1. Add all the ingredients in a bowl and combine well.
  2. Then divide into 8 portions and make round balls (25 g per portion).
  3. Set aside.
  4. Next, add all the unmarked ingredients except for the butter in another bowl and mix.
  5. Then add the butter and knead some more.
  6. Leave to proof.
  7. (First rising)
  8. Press the air out and divide this dough into 8 portions.
  9. Form into small balls and let rest for 15 minutes.
  10. Now, roll the balls out into discs and place sesame-an balls (from Step 1) in the middle.
  11. Wrap the sesame-an balls up with the dough and shape into balls again.
  12. Leave them to proof again.
  13. (Second rising)
  14. Brush milk on top and sprinkle black sesame seeds or poppy seeds for garnish.
  15. Bake in an oven preheated to 180C for 13 ~ 15 minutes.
  16. This picture shows a square form when I wrapped sesame-an balls.
  17. I added sweet potato paste and simmered sweet chestnuts in the middle.
