Delicious Chimichangas
- 5 lbs roast beef
- 3 tablespoons canola oil (original recipe calls for shortening)
- 2 onions
- 4 ounces green chilies
- 1 (16 ounce) bottle green chili sauce (I use La Victoria Salsa Verde Thick and Chunky)
- 14 teaspoon garlic powder
- 4 tablespoons flour
- 4 teaspoons salt
- 1 teaspoon cumin
- Brown roast, then roast in slow cooker or 200 degree oven for 10-12 hours.
- Drain through colander, trim fat (keep drippings).
- Shred meat.
- Heat Oil to med-high and saute onions and green chilies.
- Add salsa, garlic powder, flour, salt, and cumin.
- Cook until thick, then add juices in meat.
- Wrap desired amount of meat in tortillas and fry or bake according to personal taste.
