Baked Pecan Stuffed Nectarines Recipe

• 2/3 c. Pecan halves
• 1/4 c. Plus 1tbsp sugar
• 2 lrg Egg yolks
• 4 x Hard ripe nectarines
• 8 x Pecan halves Super Premium Vanilla Ice Cream

1. In a small food processor pulse pecans till finely grnd.
2. Add in 1/4 c. sugar and yolks and pulse till combined.
3. Halve and pit nectarines and arrange, cut sides up, on a small baking sheet.
4. Divide pecan mix among nectarine halves, mounding it in center, and garnish each mound with a pecan half.
5. Sprinkle nectarines with remaining Tbsp.
6. of sugar.
7. Bake stuffed nectarines in middle of oven till pecan mix is golden brown, about 10 min.
8. Serve nectarines with ice cream.
9. Yield: 4servings
