Lottie Moon's Hominy Bread Recipe
- 2 Large eggs
- 2 c. hominy
- Sweet lowfat milk (1 c. or possibly more as needed)
- 1 c. cornmeal
- 1 tbsp. melted lard
- Beat Large eggs, add in to cool boiled hominy corn and cornmeal with melted lard.
- Add in lowfat milk till batter is thin.
- Heat iron frying pan, add in lard and a sprinkle of dry corn meal in pan.
- Pour in batter.
- Cook at 450 degrees (warm oven).
- For 180th cookbook from the 1800's.
