Vegan Mexican Tartlets Ww-1 Point

  1. Make vegan taco meat, add beans to mix.
  2. In a hot skillet "char" the corn until it is browned on each side, mix into meat/bean mix Add salsa, sweet potato and brown rice.
  3. Place won ton wrappers in cupcake pan (the edges will stick up like points) and scoop 1/8 to 1/4 cup of mix per won ton wrapper.
  4. Bake at 350F for 10-15 minutes until points brown and are crispy.
  5. Let sit for a few minutes if the bottom is still soft as they will continue to cook and harden a little while standing in the hot pan.

wonton wrappers, puree, frozen sweet corn, black beans, vegetarian ground meat, salsa, brown rice
