Pork With Apple Raisin Sauce Recipe
- 3 pound pork loin or possibly tenderloin
- 1 c. raisins
- 1 c. port wine
- 3 med. apples
- Salt and pepper to taste
- 1 c. chicken stock
- Cook raisins, stock, and port over low heat till raisins are soft.
- Meanwhile, peel, core, and slice apples.
- Add in apples to sauce and remove sauce from heat.
- Season pork loin with salt and pepper.
- Brown pork over high heat; place in oven and finish cooking at 350 degrees (1 hour for loin - 15-20 min for tenderloin).
- To serve: Arrange slices of meat on top of the sauce.
