Asian-Style Cashew Chicken
- Chipotle
- Cumin
- Honey
- Maple syrup
- 1 teaspoon crushed red pepper flakes
- 1 cup pea pods, chopped
- 2 cups bean sprouts
- 4 scallions, sliced on the diagonal in 2-inch lengths
- 1/3 cup tamari (dark aged soy sauce, found on the international aisle)
- 1/2 cup duck sauce (found on the international aisle)
- Prepare the rice as for the master recipe, #108.
- Cook the chicken as directed, adding the red pepper flakes to the hot oil before you add the chicken.
- Add the additional vegetables when you add the onions and red bell peppers.
- Season the stir-fry with tamari and duck sauce.
- Add the cashews and cilantro or parsley and serve over the brown rice.
