Blackberry Mint Muffins

  1. Sift together flour, baking soda, baking powder, and corn starch.
  2. In a separate bowl, mix together egg, yogurt, vegetable oil, mint, and sugar.
  3. Slowly incorporate the dry ingredients into the bowl of wet ingredients.
  4. Once mixed, add in blackberries.
  5. Spoon mixture into muffin pan.
  6. Drizzle honey on top of each muffin.
  7. Bake at 375 until golden (about 20 minutes).
  8. Makes roughly 1-1/2 dozen depending on pan size.
  9. Yum!
