Clotted Cream Fudge

  1. Add all the ingredients except for the vanilla oil into a small pot, and simmer over low heat while mixing.
  2. Test the mixture by dropping it into cold water, if it doesn't get dissolved in the water, it's a soft caramel.
  3. If you can roll it into a ball between your fingers it's a fudge.
  4. Add the vanilla oil, and mix.
  5. Transfer the mixture onto parchment paper, optionally sprinkle with salt, and let it cool down.
  6. Let it chill for about 1 hour in the fridge and cut into smaller pieces.
  7. It contains 554 kcal total.
  8. If you wrap up each piece you can freeze them.
