Black Bean Burgers Recipe
- 3 can black beans - (15 ounce ea) liquid removed
- 2 1/2 c. uncooked quick-cooking oats
- 1 med sweet onion diced
- 1 can minced green chiles - (4.5 ounce) liquid removed
- 1/2 c. egg substitute
- 1 c. ketchup
- 3/4 tsp garlic salt
- 3/4 tsp freshly-grnd black pepper
- 3/4 c. all-purpose flour
- 3/4 c. white cornmeal
- 2 Tbsp. vegetable oil - (to 3)
- 12 x hamburger buns Cilantro Mayonnaise (see recipe) Lettuce leaves Tomato slices
- Mash beans coarsely with a potato masher in a large bowl.
- Stir in oats and next 6 ingredients.
- Cover and refrigerate1 hour.
- Shape mix into 12 patties.
- Stir together flour and cornmeal; dredge patties in mix.
- Heat 2 Tbsp.
- oil in a large skillet over medium-high heat.
- Cook patties in batches 6 min on each side, adding additional oil as needed.
- Serve on hamburger buns with Cilantro Mayonnaise and desired toppings.
- This recipe yields 12 servings.
- Comments: Uncooked patties may be frzn.
- Thaw in refrigerator, and cook as directed.
- Freeze cooked patties up to 1 month.
- To reheat, bake in a shallow pan at 350 degrees for 25 to 30 min.
