Cashew Chicken
- 3 whole chicken breasts
- salt and pepper
- 12 lb snow peas
- 12 lb broccoli
- 2 -4 green onions
- 1 (15 ounce) can bamboo shoots
- 1 cup chicken broth
- 14 cup soy sauce
- 2 tablespoons cornstarch
- 12 teaspoon sugar
- 1 teaspoon hot chili sauce
- 14 cup salad oil or 14 cup sesame oil
- 1 (4 ounce) package cashews
- 1.
- Slice chicken into 1" squares add salt and pepper to taste .
- Chop green onions.
- 2.Pour chicken broth into a small bowl and mix togeher with soy sauce,cornstarch,sugar and chili sauce.
- To Cook.

- Heat 1 tblsp.
- of oil over med heat and add nuts,shake pan until toasted.
- Remove and set aside.

- Add remaining oil to pan and add chicken cook quickly remove and set aside.
- 3.
- Add veggies saute till start to color.
- Add broth mixture then chicken bring to boil and let simmer for 2 to 4 minutes or until veggies are cooked.
- Add bamboo shoots and stir until sauce thickens.
- Mix in green onions and nuts.
- Serve over steamed rice.
