Not Your Mama's Mashed Potatoes

  1. Cook potatoes, carrots, garlic, and jalapeno in a large pot covered with water bring to a boil over high heat.
  2. Cook 15 to 20 minutes until potatoes are tender.
  3. Drain water from pot.
  4. Microwave corn for a few minutes to heat.
  5. Stir corn into potatoes along with butter.
  6. Mash the mixture with a mixer or potato masher until butter is melted and potatoes have reached desired consistency.
  7. Mix in cheese, salt and pepper.
  8. Serve hot.
