Pulled Chicken and Jalapeno-Jack Sandwich

  1. Grill chicken on medium heat 7 to 8 min.
  2. on each side or until done (170 degrees F); cool.
  3. Shred chicken with fork; place in saucepan.
  4. Add barbecue sauce; toss to coat.
  5. Simmer on medium-low heat 5 to 7 min.
  6. or until heated through, stirring frequently.
  7. For each serving: Spread cut sides of 1 roll with 1 Tbsp.
  8. (15 mL) dressing; fill with 1/4 cup (60 mL) lettuce, 2 cheese slices and 4 oz.
  9. (115 g) chicken mixture.
