Spicy Black Bean Burgers

  1. Add black beans into a bowl, and lightly mash them using a fork or potato masher.
  2. Add the remaining ingredients.
  3. Mix together with a fork until incorporated.
  4. Form into 5 patties, approximately 4 ounces each.
  5. I got four 4 ounce patties and one 3 ounce patty.
  6. Place patties on a piece of parchment paper and refrigerate for at least 30 minutes or place in the freezer for later use.
  7. To grill: Spray a piece of aluminium foil with cooking spray and place it on a grill over medium heat.
  8. Add patties once the grill is hot.
  9. Cook each side of the burger for about 6 minutes.
  10. To fry: Place about 2 teaspoons of olive oil in a pan over medium heat and cook each side of the burger for 4-6 minutes.
  11. Notes: To cut the pepper, onion and jalapeno, I placed them in my mini food processor and pulsed it a few times until the vegetables were small.
