Poppy Seed Chicken Casserole
- 4 large bone in chicken breasts, skin on
- 2 tablespoons Mrs. Dash table blend seasoning
- 4 tablespoons olive oil
- 1 (16 ounce) container sour cream
- 2 (14 1/2 ounce) cans cream of chicken soup
- 1 (8 ounce) container sliced mushrooms, drained
- 2 teaspoons poppy seeds
- 1 12 sleeves ritz type snack crackers, crushed
- 12 cup butter, melted
- Preheat oven to 350.
- Drizzle chicken with Olive Oil and sprinkle with Mrs.
- Dash seasoning.
- Roast chicken until done, and then let cool.
- Peel the skin from the chicken breast, and pull chicken off the bone into bite sized pieces, and put on the bottom of a greased 13X9 casserole dish.
- Mix together sour cream, cream of chicken soup, mushrooms and poppyseeds and pour mixture over chicken in casserole dish.
- Mix crushed crackers with the melted butter and sprinkle over casserole.
- Place in preheated 350F oven until warmed through or soup begins to bubble, about 20-25 minutes.
