Chicken and Peach Salad
- 2 12 ounces cooked white chicken meat, shredded
- 1 12 cups Chinese cabbage, shredded
- 14 cup fresh mint leaves, shredded
- 1 small peach, cut into wedges
- 2 tablespoons lime juice
- 1 teaspoon olive oil
- Combine chicken, Chinese cabbage, fresh mint leaves and peach wedges in a medium bowl.
- For dressing, combine lime juice and olive oil in a small bowl.
- Toss dressing with salad and serve.
