Kase Spatzle with Cabbage
- 4 shallots, thinly sliced
- 1 small head cabbage, shredded
- 2 T. canola oil
- to taste salt & pepper
- 4 T. butter
- 1 1/2 pounds prepared spatzle
- 1/2 t. ground paprika
- 1/4 C. fresh parsely, chopped
- 5 oz. shredded swiss cheese, preferably Emmentaler
- Fry the shallots in the canola oil in a large skillet until soft and translucent.
- Melt the butter in the skillet and then saute the cabbage until tender, sprinkling generously with salt and pepper.
- Stir in the prepared spaztle.
- Sprinkle evenly with cheese, paprika and parsley.
- Cover and cook until cheese melts, about 5-10 minutes.
- Serve.
