Sweet Mesquite BBQ Salmon with Corn Salsa
- 1 untreated cedar plank (14x7x1 inch)
- 1 skin-on salmon fillet (2 lb.), 1 inch thick Walmart Supercenter 1 lb For $5.00 thru 02/14
- 3 Tbsp. A.1. Dry Rub Sweet Mesquite BBQ
- 3 Tbsp. olive oil, divided
- 1 cup frozen corn, thawed
- 1 tomato, chopped
- 2 green onions, chopped
- 1 Tbsp. white wine vinegar
- Immerse plank in water, topping with a weight to keep it submerged.
- Soak 4 hours.
- Heat grill to medium heat.
- Place fish, skin-side down, on plank.
- Rub fish with dry rub, then drizzle with 1 Tbsp.
- oil.
- Place plank on grill grate.
- Grill 20 min.
- or until fish flakes easily with fork.
- Meanwhile, combine remaining oil with remaining ingredients.
- Serve fish with corn salsa.
