Sweet Mesquite BBQ Salmon with Corn Salsa

  1. Immerse plank in water, topping with a weight to keep it submerged.
  2. Soak 4 hours.
  3. Heat grill to medium heat.
  4. Place fish, skin-side down, on plank.
  5. Rub fish with dry rub, then drizzle with 1 Tbsp.
  6. oil.
  7. Place plank on grill grate.
  8. Grill 20 min.
  9. or until fish flakes easily with fork.
  10. Meanwhile, combine remaining oil with remaining ingredients.
  11. Serve fish with corn salsa.
