Lemon Creamed Rice
- 12 cup medium grain white rice
- 600 ml milk
- 12 cup cream
- 13 cup sugar
- 1 lemon, zest of, grated
- Place the rice into a saucepan with the milk and lemon zest.
- Bring to the boil, reduce heat then simmer, covered, for 30 minutes or until the rice is tender and all the milk has been absorbed.
- Stir frequently to prevent the rice sticking to the base of the saucepan.
- Remove from heat, stir in the cream and sugar and serve with a spoonful of ice cream.
- Garnish with a slice of lemon and a fresh mint leaf.
- Other forms of sweetener can be used instead of sugar if prefer.
