Chicken Parmesan
- 2 lb. chicken pieces
- 3 Tbsp. shortening
- 1 (14 1/2 oz.) can tomatoes
- 1/3 c. Heinz 57 sauce
- 1/3 c. Parmesan cheese
- grated Cheddar cheese
- 1/4 c. all-purpose flour
- 1 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. sugar
- 1/4 tsp. oregano leaves
- 1/4 lb. Mozzarella cheese, cut into strips
- Coat chicken with flour, salt and pepper; brown well in shortening.
- Place chicken in baking dish.
- Blend any remaining flour mixture with tomatoes; add Heinz 57 sauce, Parmesan cheese, sugar and oregano.
- Pour over chicken.
- Bake, covered, at 350u0b0 for 30 minutes.
- Remove cover; top with cheeses.
- Bake, uncovered, 25 minutes longer or until chicken is tender.
- Skim excess fat from sauce.
