Winter Squash With Sweet Spices

  1. Cut off squash, peel, remove seeds and strings.
  2. Cut flesh into 1-inch pieces.
  3. Combine garlic, pepper, cinnamon, ginger, sugar, oil and water in a large skillet.
  4. Bring to a simmer.
  5. Add squash; stir until coated.
  6. Sprinkle with salt.
  7. Bring to a boil. Cover and cook over low heat, occasionally stirring gently, until squash is tender, 30 minutes.
  8. Remove garlic, chop and return to pan.
  9. If sauce is too thin, uncover and cook 2 to 3 minutes longer or until it thickens.
  10. Taste and adjust seasonings.
  11. Serve hot. Serves 3 to 4 servings.
