Herb and Cheese Scones With Chive Cream

  1. Preheat oven to 220C Line a baking tray with non-stick baking paper.
  2. Sift flour into a large bowl.
  3. Add salt, cayenne pepper and pepper.
  4. Mix well to combine.
  5. Add butter.
  6. Using your fingertips, rub butter into flour mixture until mixture resembles fine breadcrumbs.
  7. Add herbs and cheese to flour mixture.
  8. Stir well to combine.
  9. Add milk.
  10. Mix with a flat-bladed knife until a soft dough forms.
  11. Knead lightly on a floured surface.
  12. Pat dough into a 2cm-thick round.
  13. Using a 5cm cutter, cut into 12 rounds.
  14. Place rounds close together on a baking tray.
  15. Bake for 12 minutes, or until golden and well-risen.
  16. Set aside on baking tray to cool slightly.
  17. Combine sour cream, chives and salt and pepper in a small bowl.
  18. Halve scones.
  19. Top 12 halves with shaved ham and chive cream.
  20. Sandwich together with remaining scone halves.
  21. Serve.
